REALLY easy fruit salad

3/4 pkg cream cheese
1 8oz container of cool whip

Soften the cream cheese and mix together with cool whip. Then add any fruit you want. I like to do strawberries, bananas, and apples, and grapes.



Janice's Orange Tapioca Salad

1-3 ounce box of Orange Jello
2-3 ounce boxes of Tapioca Pudding
3 cups Water

Mix together-cook until thick-cool and fold in 8 ounces Cool Whip.

Add 2 cans Mandarin Oranges, 1 13 1/2 ounce can Crushed Pineapple-well drained.

Pour into greased jello mold or dish. Refrigerate-best if it is overnight. Garnish with mandarin oranges. 

Red Velvet Pancakes

1 cup Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
3 Tbsp Sugar
2 Tbsp Unsweetened Cocoa Powder

Combine dry ingredients in large bowl-set aside.

In a separate bowl whisk together:

1 large Egg
3/4 cup Buttermilk
1/4 cup Sour Cream
1/8 tsp Red Gel Food Coloring (optional)
2 tsp Vanilla Extract

Add wet ingredients to dry, and mix until just combined. 
Cook pancakes on griddle.

Buttermilk Syrup

1 1/2 cups Sugar
3/4 cup Buttermilk
1/2 cup Butter
2 teaspoons Corn Syrup
1 teaspoon Baking Soda

2 teaspoons Vanilla Extract

In a saucepan (use a large pan as it will bubble up a lot) stir together the sugar, buttermilk, butter, corn syrup, and baking soda. Bring to a bowl and cook for 7 minutes. Remove from heat, and stir in the vanilla. 

Gingerbread Waffles

3 cups Flour
4 teaspoons Baking Powder
2 teaspoons Cinnamon
2 teaspoons Ginger
1/2 teaspoon Nutmeg
1/2 teaspoon Salt

4 large Eggs
2/3 cup packed Dark Brown Sugar

1 cup Canned Pumpkin
1 1/4 cups Milk
1/2 cup Molasses
1/2 cup Melted Butter

Preheat waffle iron.

In a large bowl combine flour, baking powder, cinnamon, ginger, nutmeg and salt.

In a medium bowl, beat eggs and brown sugar until fluffy, then beat in pumpkin, milk, molasses and butter.

Stir the wet ingredients into the dry until moist. Do not over stir.

Spray waffle iron with Pam or brush with melted butter, then cook.

Serve with toppings of choice (buttermilk syrup and maple whipped cream).

Banana Crumb Muffins

Batter
1/2 C flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 overripe banans mashed
3/4 cups white sugar
1 egg lightly beaten
1/3 cup melted butter

Topping
1/3 cup packed brown sugar
2 tablespoons flour
1/8 teaspoon cinnamon
1 tablespoon butter

In bowl mix, flour, soda, powder, and salt. In another bowl mix bananas, egg, sugar, and butter. Stir banana mixture into flour mixture. Mix togther brown sugar, flour, and cinnamon for topping. Cut in butter until it resembles course cornmeal. Sprinkle topping over muffins and bake for 18-20 minutes at 375 degrees.

Chocholate chip pudding cookies

1 C brown sugar
1 C sugar
1/2 C margerine (softened)
1/2 C butter (softened)
Mix together

Then add:
 2 eggs and mix again

Then add:
1 teaspoon vanilla
1 small pkg of vanilla instant pudding
Mix again

Then add:
3 Cups of flour
1 teaspoon of baking soda
1 teaspoon of salt
1 teaspoon of baking powder
Mix thoroughly

Then add:
1 Cup (1/2 bag) of white chocoltae chips
1 Cup (1/2 bag) of milk cocolate chips
Or any add-ins you like 

Nan's Bread Spread

1 container sour cream (or greek yogurt)
8 oz cream cheese
1 bag shredded cheddar cheese
Bacon and green onion as desired

Mix together in oven safe bowl, and warm at 400 for 30 minutes. Or heat in saucepan. Serve over baguette or any delicious bread.

Oreo Delight Pie

1 pkg Oreo cookies
8oz cream cheese
1/2 cup powdered sugar
1 small pkg vanilla instant pudding
16 oz cool whip (divided)
1 large pkg chocolate instant pudding
4 Cups of milk

Layer 1: I like to buy the pre-made oreo pie crusts (2), but you can also crush oreos and mix with 1/2 cup butter to make the crust layer in a 9x13 dish. Layer 2: Mix cream cheese, 2 Cups cool whip, and powdered sugar. Spread on the crusts. Layer 3: Mix dry chocolate pudding, dry vanilla pudding and milk. Spread on top of cream cheese layer. Layer 4: Top with cool whip and sprinkle with crushed Oreo cookies. Refrigerate before serving. I like to let it sit overnight in fridge.

Apple Crisp Topping

1/2 Cup rolled oats
1/2 Cup packed brown sugar
1/4 Cup flour
1/2 teaspoon ground cinnamon
1/4 Cup butter or margarine

Combine oats, sugar, flour, cinnamon and salt until well mixed. Then cut in the butter to make the crumble. Pour over apples in a glass baking dish and bake for about 20 minutes at 350 degrees.

Lasagna

Sauce:
1 clove garlic, minced
1 medium onion, chopped
1 Tbsp basil
1 1/2 tsp salt
1/2 tsp sugar
1 tsp oregano
12 oz tomato paste
1 1/2 cup water
1 lb ground beef
1 (3 oz) can chopped mushrooms

Filling:
2 to 3 cups cottage cheese
1/4 cup parmesan cheese
2 Tbsp dried parsley
2 beaten eggs
Scant 1/2 tsp black pepper
1 lb mozzarella cheese

6 lasagna noodles
1/4 cup parmesan cheese

Simmer ingredients of sauce together for 1/2 hour. Meanwhile, put ingredients of filling in blender and mix well. In a 9x13 inch baking dish, put a thin layer of sauce, half the noodles, all of the filling, and 1/2 of the Mozzarella cheese. Repeat with 1/2 of the remaining meat sauce and the rest of the noodles, sauce, and cheese. Sprinkle with parmesan cheese.

Bake at 375 (350 if glass dish) for 30 minutes. Let cool 10 minutes.

Orange Jello with Cheese

1 sm pkg orange jello
1 med can crushed pineapple
1/2 cup sugar
1 cup grated cheddar cheese
 1 cup whipped cream

Dissolve jello in 1 cup boiling water. Cook sugar and pineapple 3 minutes - add to jello. When cool, add cheese. Place in fridge until mixture starts to thicken. Fold in whip cream.
